Having a go: Philippines; sorry, my Chicken Adobo was well done and I really mean well done!

So, you might say, what could go wrong with this dish? I must admit that one of the attractions that drew me to try it out was the fact that I recognised all the ingredients. A quick look at the recipe picture convinced me that you could not do much to sabotage any derivation of a chicken dinner.

 

But the version all my cooking left me with was not quite the same as the accepted plate of chicken that one would expect to see when served dinner on one of those islands. I followed the instructions to the letter and marinated it a day in advance, but I think the main lesson that making this taught me was that you can reduce your sauce too much, precisely what I did.   So, my brown sauce was too thick and left my browned chicken looking a lot darker than it should have, but apart from that, my taste team quite enjoyed the result even though I had my doubts when it came to a chicken and vinegar mixture. All in all, my jus let me down somewhat.   But it worked!

 

July starts with Canada Day, and one of their most famous national dishes is Poutine. Essentially this is a dish of cheesy chips.   Surely I can’t get that wrong, Can I? I suppose only time will tell, I guess…
