Focussing in on the middle layer…

04 May 2023

Dear LPG,

I read with interest what GF had to say about the importance of the bread, which we use so much for our quick meals, and I took on board everything he said about the kind of bread we eat.    There is no doubt about it. The concept of bread is age-old. Even the Lord's Prayer mentions it in the 11th verse of Matthew chapter 6, where the inference is that we should see it as something to appreciate daily.

And while it was mind-stretching to contemplate the best type of bread to make our sandwiches out of, I think it is much more interesting to think about what you put between the layers of bread.   Few people hear their stomachs tell their brains that they fancy a sandwich without contemplating what filling they desire.

The first thing I do most mornings is reach for my tablet, and, on the morning that I read this particular post, it was not long before I found myself in the kitchen concocting one of the easiest to slap together, a 'bread and jam special' which goes down so well with that first-morning cuppa. I also capitalised on the multitasking aspect of being able to eat it while I continued to do a little more surfing.

One of my favourites has always been a subtle mixture of cheese, apple and salad cream, which is perfect on a summer's day. At the same time, the cold gets me reaching for the sandwich maker, where some melted cheese is usually included as part of the filling or, if I can wait a little longer, the frying pan and an inlay which includes bacon, ham, chicken or some other hot meaty ingredient makes the anticipation all the more rewarding.

All this got me thinking about the most popular bread fillings, and the internet has many answers to that question. Looking through a few websites widened the scope of things you can slice or drop on layer one before adding the top layer of bread.

I have concluded that, perhaps, the secret is healthier bread and fewer sandwiches, but while trying to cut down on quantity, it would be selfish of me not to share some of the ideas that widened my sandwich vision…
